The Defratelli is a unique cuvee – made the same way as Champagne but using the local Spergola macerated on the skins. The result is a deeply coloured wine savoury to it's core. With a fine bubble this makes for an outstanding aperitivo but can easily carry most vegetable-based dishes or grilled fish. One for the adventurers!
