Nomos Trajadura 2019
2019 is Ricardo second vintage, and the first of this single varietal cuvee.
Made of 100% Trajadura, one of Portugal's best known white grapes, most of the process is done manually starting with the harvest.
The berries spend fours days macerating on the skins, while fermentation and aging takes place in old barrels, where the wine is left for 12 months. While they implement a philosophy of minimum intervention in the winery, using indigenous yeast and spontaneous fermentation, a touch of sulphites are added before bottling to aid stability. Only a tiny production of 1000 bottles was made.
