Somewhere in between Tradition and innovation is where we find Ca'de Noci, a family owned winery in Emilia Romagna, run by brothers Alberto & Giovanni.
Here they champion ancient autochthonous varietals and work the vines keeping the process as natural as possible while experimenting with with modern techniques and extremely long macerations.
The De Fratelli is a unique cuvee: made the same way as Champagne but using the local Spergola macerated on the skins. The result is a deeply coloured wine with nuts, stonefruits and fresh vegetable notes (celery, fennel). Savoury to it's core and with fine bubble this makes for an outstanding aperitivo but can easily carry most veggie based dishes or grilled fish.
